A CUP OF SOUP TO TOAST THE NEW YEAR

HOT AND HEALTHY SOUP FOR 2019

HAPPY NEW YEAR everyone and Welcome to our first WHAT’S ON THE MENU MONDAY of 2019.

Every New Year begins with a new list of resolutions. It’s the time we reflect on the things of which we are proud AND the things we hope to improve. And, if you’re like me, those resolutions always include the intent to GET IN BETTER SHAPE and to EAT HEALTHIER.

This is important after a month of holiday festivities in which we all probably ate a little too much of everything — especially foods and treats that might not be geared to maintaining a healthy weight, increasing energy, supporting our immune system or protecting our bodies from illness and disease.

Now, a resolution where we resolve to change our entire diet stands little chance of surviving even a few weeks. Drastic changes in our lifestyle typically are met with resistance, because they are just too difficult to maintain.

But, taking small steps toward a healthier diet and better eating habits can result in big changes.

So, today I’m sharing a recipe that I’m never without. It’s my simple, easy 5 MINUTE NEW YEAR’S VEGETABLE SOUP and it’s packed with flavor and loaded with healthy benefits for our minds and bodies.

It’s low cal and low to no fat. It’s filling and satisfying. Truly, I make this soup approximately once a week and keep it in the fridge for quick meals and tasty pick-me-ups. Moreover, it’s the easiest soup you’ll ever make. And, here’s how you do it:

IN A STOCK POT COMBINE:

2 cubes of Bouillon

I like to use Knorr chicken or vegetable flavored extra-large cubes. You can use the low-sodium version if you like. I don’t worry about this, however, because I add several cups of water and other ingredients which dilute the salt content in the bouillon to a perfect balance.

4 1/2 cups Water

1 14.5 Oz. can diced Tomatoes with Oregano, Garlic & Basil (with juice)

1 14.5 Oz. can of Northern White Beans, drained (a nice punch of protein)

1 to 2 cups of frozen Petite Peas with Pearl Onions (comes in a 14 oz. bag)

1 to 2 cups Baby Carrots (love these as they’re already peeled)

And, that my friends took 2 minutes.

NOW ADD:

2 to 3 diced Celery Stocks

Cover pot and let it simmer gently for about 2 hours.

THEN ADD:

1 bag of fresh Baby Spinach

Cover pot again and simmer for 30 minutes.

Voila! That’s it.  I never add additional spice, salt or pepper. And, if the soup becomes too thick for your taste as it simmers, just add more water.

Also, this is a very flexible recipe. If you like spinach, for instance, add two bags instead of one. If you like carrots, add more. If you don’t like celery, add less. If you hate peas, leave them out. Pick and choose your veggies according to your personal taste. And, if you want a super protein-punched dish just add some cooked, shredded chicken breast for a lean and yummy chicken stew.

This simple dish is packed with vitamins B1, B2, B6, C, K and E, which fight flus and colds and boost our immune system.

It’s loaded with cholesterol-lowering pthalides, beta-carotene, manganese, zinc and selenium, which combat osteoporosis, protect our vision, lower high blood pressure, aid digestion and increase energy.

And, it’s rich in neoxanthin, violaxanthin, antioxidant cancer-fighting flavonoids, coumarins, lycopene, potassium and thiamine all of which help protect us from a multitude of cancers, including those of the breast, lung, colon, cervix, prostate and stomach.

Further, experts agree that canned vegetables like tomatoes, contain all the same essential vitamins and nutrients as fresh vegetables. And, if they’re organically canned you don’t have to worry about additives, including extra salt. 😊

So, take five minutes and stir up a pot of hot, delicious soup. Add it to your regular diet as a meal replacement for your daily lunch or dinner. It’s a quick and easy way to feel better, reach your resolution goals, boost your nutrition and ensure a HAPPY AND HEALTHY 2019!
